Hospitality Club dinner will have Italian flavor

The University of Akron’s Hospitality Club and the Garde Manger Club will host a dinner titled “Leaning Into an Italian Spring” at 6 p.m. Saturday, April 21 at the Crystal Room Restaurant in Gallucci Hall.

The special guest will be executive chef Roger Thomas of Piatto Novo in the Sheraton Suites of Cuyahoga Falls.

Antipasto - Zuppa di Sedano e Porro
Celery and leek soup with olive oil crostini

Primo -  Risi e Bisi
Lemony risotto with peas

Pesce
Seared Striped Bass “bagnati” with minced olives, garlic and extra-virgin olive oil

Intermezzo
Pink grapefruit-mint granita

Secondo - Grigliata Mista
Prosciutto-wrapped chicken breast, peppered and smoked pork tenderloin, swiss chard, roasted beets and pistachio pesto

Insalata
Mixed greens with Chef Thomas’ aged red wine vinegar, sea salt and extra-virgin olive oil

Dolci -  Panna Cotta all’Arancia
Orange panna cotta with balsamic strawberries and almond cantuccini

All supporters $50. Proceeds will subsidize educational trips/activities.
